Lemon and Olive Coated Lamb Cutlets
Ingredients 1 cup pitted green olives 1 ½ tbsp finely grated lemon rind 1 ½ tbsp olive oil 2 clove garlic, crushed 3 tbsp chopped flat leaf parsley 12 lamb cutlets, trimmed
Methods Place olives in a food processor with the lemon rind, olive oil, garlic and parsley. Process until the mixture is a fine paste. Spread olive mixture over both sides of lamb. Heat a non stick frypan over medium heat. Cook the cutlets for 2 minutes each side or until cooked to your liking. |
